Burrito bowls are delicious to eat and easy to make. There are many ways to go about making a burrito bowl as per preference. This recipe of burrito bowl is rich in protein and good fats and is also very nutritious.
Ingredients (makes for two)
½ cup Brown Rice (cooked)
½ Cup Corn Kernels
½ Cup Beans Soaked
½ Cup Lettuce
½ Cup Tomatoes
1 Avocado
½ Cup Bell Pepper
½ cup Green onion stems
1 clove Garlic (crushed
½ cup Onion chopped
¼ cup Cilantro
1 Lime
Salt to taste
Directions
Keep the brown rice to cook
Boil the corn if frozen
Drain and wash the beans. You can use any beans you like to eat. I would recommend going for black beans.
Prepare the veggies- Chop up the tomato, onion, green onion stems, cilantro, bell pepper, avocado and lettuce. Crush the garlic and add it to the blender along with the avocado and some pepper for taste. Blend it until smooth.
Take a bowl and mix in rice, beans and the veggies. Pour in some lime juice as per your taste. Place a scoop of guacamole on top of the mix and garnish it with cilantro,
